Chicken and Vegetable Nuggets

Ingredients

  • 1 carrot
  • 1 zucchini
  • 1 bunch broccoli
  • 2 chicken breasts
  • Chicken bone broth
  • 3 eggs
  • 2-3 cups bread crumbs
  • 1 cup plain flour
  • Olive Oil

Method

  1. Preheat oven to 180 degrees Celsius fan forced.
  2. Boil all the vegetables and chicken in a pot with water and chicken bone broth until cooked through.
  3. Put chicken, vegetables, and a bit of chicken stock in a large bowl and blend together with 2-3 eggs and olive oil until completely blended.
  4. Add breadcrumbs and flour to the mixture, adding in just enough to make it not stick to your hands.
  5. Roll the mixture into balls then gently flatten them then coat with breadcrumbs and put on baking tray.
  6. Spray with olive oil to get the crunch factor then bake for 10-15 minutes or until golden brown.
  7. Serve to your baby and watch them devour it!

Egg Fritters

Ingredients

  • Eggs (depending how many you want to cool I generally do 1 per muffin tray slot).
  • Cut up ham.
  • Cut up cherry tomatoes.
  • Steamed and cut broccoli.

Method

  1. Preheat oven to 180 degrees Celsius.
  2. Crack eggs into individual muffin tray spaces and whisk.
  3. Add in all the vegetables you are wanting to add in.
  4. Sprinkle a bit of cheese on top of the fritters once done then place in the oven.
  5. Cook for 10-20 minutes – ensuring all egg is cooked through.
  6. Cool and serve to your baby.

Broccoli Bites

Ingredients

  • 1 bunch of broccoli
  • 1 egg
  • Tbsp olive oil
  • Handful of cheese
  • 1 cup breadcrumbs (add more if mixture is too wet)

Method

  1. Steam/boil the broccoli for 15 mins then place into a mixing bowl.
  2. Mash up the broccoli and add in cheese, egg, olive oil and mix around.
  3. Add in breadcrumbs plus a pinch of salt and mix until it doesn’t stick to your hands.
  4. Roll into balls and place in frypan with a drizzle of olive oil, then squash them so they are flat.
  5. Cool and serve to baby.

Mum and Bub Smoothie

Ingredients

  • Le Puree Mum and bub frozen smoothie cubes x 3
  • 2 tbsp Probiotic Yoghurt
  • 1 cup oat milk
  • Baby biotics powder
  • 1 tsp Chia seeds

Method

  1. Mix all the ingredients together in a blender and blitz until you have the desired texture for you and your baby.
  2. Serve and enjoy!
