Ingredients:
- 1 cup jasmine rice
- 6 cups water or chicken broth
- 1 cup cooked, shredded chicken
- 1 thumb-sized piece of ginger, sliced thinly
- 1 broccoli bunch
- 1 carrot
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 tablespoon soy sauce (optional)
- Salt and pepper to taste
- Chopped green onions
- A dash of sesame oil for flavour
Method:
- Rinse the jasmine rice under cold water until the water runs clear. This helps remove excess starch.
- In a large pot, combine the rinsed rice and water or chicken broth. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low and add the sliced ginger and minced garlic. Let it simmer gently, stirring occasionally, for about 45 minutes to an hour, or until the rice breaks down and the congee reaches a porridge-like consistency.
- Add the cooked, shredded chicken, carrot, broccoli and chopped onion. Stir well to combine and continue to cook for another 10-15 minutes.
- Season with soy sauce (if using), salt, and pepper to taste. Adjust the seasoning as needed.
- Ladle the congee into bowls and garnish with chopped green onions and a dash of sesame oil if desired.
